With the rise of farmstead, or cow-to-cheese, producers, is “grassfed” really sustainable and does it mean that the cows produced better milk to make cheese? What is the Barnyard Collective?

The Barnyard Collective, a kind of fellowship of cheesemongers and industry enthusiasts, hosts some delicious cheese related events such as Cellars of Jasper Hill, Vermont. March 2016’s cheese and honey pairing was wonderful surprise to our palettes. The famously delicious Fonduel was a purely sinful indulgence.
